I’ve compiled a list of not only YouTube content but other links that I will do my best to continually update to add more content. I will also be maintaining a few playlists that appear under each country/territory. Please note that some channels or authors claim multiple nationalities/origins and I have done by best to note them here.
A student also recommended a Facebook group to me called Diferencias léxicas en Hispanoamérica y España in which they compare the different words people use for things in Spanish-speaking countries.
